Keto Breakfast Burrito Bites

I was excited when I started seeing this viral video breakfast idea.

The problem with short form content these days, is that they very rarely offer ingredients, or instructions! So frustrating…

So I try a few times, to perfect these bites for our followers. I think they’re a big success.

Additionally, I am always looking for easy breakfast options that reheat well for my family, but especially for my kids!

My kids loved these breakfast burrito bites and I liked that they were getting some protein in early in the day.

These egg bites can easily be customized with ingredients you like.


How to Make breakfast burrito Bites:

To make these easy egg burrito bites, start by getting out 12 tortillas that are the street taco size.


These fit perfectly inside of the muffin cups. Place the tortillas on a plate and microwave them for about 15 seconds. This will help them not break when putting them in the muffin pan.


Next, carefully place one tortilla inside each muffin cup. Be careful not to tear the tortilla as you gently press it down.


After the tortillas are ready, chop a handful of breakfast ingredients and place inside each tortilla. Sprinkle cheese, add seasoned eggs and you’re all set!


Tips and Frequently Asked Questions:

I used chopped browned sausage in this recipe, but you could use chopped bacon instead.

I added chopped peppers as the veggie, but chopped spinach would also be good!

Everything but the bagel seasoning would also be good in these instead of just salt and pepper.

I used shredded cheddar cheese, but any cheese would work.

Any tortilla should work, but I used Mission Street Taco size tortillas.

Top with hot sauce or salsa if desired.

  • 12 low carb tortillas street size
  • 8 eggs
  • 1/4 cup heavy cream
  • 2 cups breakfast sausage cooked; crumbled
  • 1 cup shredded cheese
  • 1/4 cup chopped pepper
  • 1/4 cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp herbal seasoning


  • Preheat oven to 375 degrees.
  • Warm 12 street sized tortillas in the microwave for 15 seconds. Line a greased muffin tin with tortillas to form a cup.
  • Add breakfast ingredients of choice. Sprinkle with cheese.
  • In a blender or bowl whip eggs, heavy cream and seasoning. Pour over egg cups. Being careful to not overfill.
  • Bake 30 minutes. Allow bites to cool before serving.
