This Gingerbread Mug Cake, seriously, is as good as a traditional cake baking in your oven. Fresh and warm and perfect for individual servings.
What is gingerbread?
Gingerbread refers to a broad category of baked goods, typically flavored with ginger, cloves, nutmeg, and cinnamon and sweetened with honey, sugar, or molasses.
Gingerbread foods vary, ranging from a soft, moist loaf cake to something close to a ginger snap.
Gingerbread was a popular treat at medieval European festivals and fairs, and there were even dedicated gingerbread fairs.
Gingerbread came to the Americas with settlers from Europe.
In December 2001, bakers in Torun, Poland, attempted to beat the Guinness Book of World Records for the largest-ever gingerbread house.
It was made in Szczecin, Poland, with 4,000 loaves of brick-shaped gingerbread measuring 11 1/2 feet high. It took a week to create and used 6,000 eggs, a ton of flour, and 550 pounds of shortening.
Alas, they lost to an American team from Texas.
Tips and tricks:
Be sure to use a microwave safe mug or ramekin.
Gingerbread spices are key here. High quality cinnamon, ginger and allspice. A pinch of black pepper is very traditional.
Err on the lower temperature time of your microwave. It’s easier to add a bit, versus and overcooked cake.
A bit of fresh whipped cream is the perfect accompaniment!

Keto Gingerbread mug cake
- ramekin or mug
- 1 TB butter melted
- 2 TB brown natural sweetener
- 1 tsp vanilla extract or vanilla powder
- 1 TB heavy cream
- 1 egg yolk
- 3 TB almond flour
- 1/4 tsp baking powder
- 1/4 tsp ground ginger
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/4 tsp ceylon cinnamon
- 1/4 tsp salt
- 1/4 tsp black pepper
- Spray a microwave safe ramekin or mug with non-stick spray.
- In a measuring cup, or your mug, combine melted butter and natural sweetener.
- Add in spices and vanilla. Stirring well to combine.
- Mix in flour and baking powder. Stir well. Scrap bottom and sides well.
- Add egg yolk and cream. Stir well until thoroughly combined.
- Microwave for 45 seconds to 1 minute depending on microwave wattage. Err on the side of less time first.
- Allow to cool. Top with fresh whipped cream if desired.
