Keto 2-Minute Lasagna In a Cup
Homemade Lasagna is a classic recipe that every cook should have in their rotation.
Creamy ricotta cheese filling, and a rich meaty tomato sauce are all topped with more cheese and baked until browned and bubbly!
But what if you’re keto, and need lasagna without noodles, and you NEED IT NOW. LOL.
Well here it is….
The best lasagna recipe is made with ingredients that you know, and it’s not difficult at all!
All you need is a bowl, and leftovers you probably already have from meal prep, or last nights dinner!

• Cheese Filling: For this classic lasagna recipe, the filling contains ricotta and parmesan with seasonings and a couple of tablespoons of seasoning . No ricotta? No problem, cottage cheese works just fine in this recipe!
• Meat: I use both Italian sausage and ground beef for great flavor. If using all beef, add a ¼ teaspoon of fennel seeds and some Italian seasoning to the meat mixture for flavor.
• Sauce: To keep this sauce quick, I use pasta sauce or pizza sauce.
• Mozzarella cheese: Or any Italian blend of cheeses work great here

Keto 2-Minute Lasagna In a Bowl
Ingredients
- 1 cup ground meat beef; Italian sausage
- 1/2 cup pizza sauce or spaghetti sauce
- 1/2 cup whole milk ricotta or cottage cheese
- 1/2 cup Italian cheese blend
- 1 tsp Italian seasoning blend
- 1/2 tsp fresh basil optional
Instructions
- Layer ingredients in a microwave safe container. Starting with meat, sauce, ricotta, shredded cheese. Repeat.
- Microwave 2 minutes, or longer until thoroughly cooked a bubbly. Serve hot.
