Keto 2-ingredient Root Beer Float Bars

A root beer float is an indulgent treat to have on a hot day. The classic root beer float is made by pouring ice cold root beer over a glass that is filled with vanilla ice cream.

The vanilla of the ice cream mellows out the spiciness of the root beer and the whole drink takes on a delightfully creamy flavor.



My grandparents always had root beer and ice cream, and that’s where we always ate floats in the summer!


Bring on Summer!



The only thing that would make a root beer float more refreshing is to make it even colder and turn the classic drink into a batch of Root Beer Float Popsicles.

How To Make Root Beer Popsicles
First you need to open the root beer can or bottle and set it out on the counter for a while, so it loses it’s effervescence. The root beer needs to be pretty flat so the bubbles don’t take up space.

Flat root beer really helps!



Avoid filling the popsicle mold too much, so you don’t get root beer all over the inside of your freezer. Just fill them about 3/4 of the way full. Trust me on this one.

I adore silicone, and they make some really great molds. I always have a few different options linked in our Amazon storefront.


NOTE: The amounts of cream and root beer can be adjusted to your preferences for flavor!
