Butterscotch brings me right back to childhood eating. My mom always used butterscotch chips.

 

Pair that with cinnamon and these cookies scream nostalgia.

 

Every bite of this dessert is buttery and delicious making it perfect for parties, especially in the fall and winter.

 

No oatmeal was harmed in the making of these cookies, instead, multiple high fiber, low carb naturally occurring ingredients were used. I found all of my ingredients at Walmart, so hopefully, you will too!

A word on butter:

Room temperature butter is about 65°F (18°C), which is likely cooler than your kitchen.

So if your cookies are spreading too much, you’re probably softening your butter too much.

Good rule of thumb: set your butter out on the counter 1 hour before you begin.

If it gets too soft (use your finger to test), place back in the refrigerator for 10 minutes.

Don’t sabotage your efforts; make sure your butter is the correct consistency before you begin.

Instructions

  • Preheat oven to 350 degrees.
  • Combine dry ingredients in a medium sized bowl.
  • Combine wet ingredients with a hand mixer.
  • Slowly add dry ingredients. Continue to mix until dough pulls together. Add chips by hand.
  • On a silicone or parchment lined baking try, scoop cookie dough using a cookie baller or two spoons onto the baking tray.
  • Bake 13 to 15 minutes until lightly golden around edges.
    Let cool
