A casserole staple made keto!

 

If you are like me, you are in the thick of preparing for the holiday season!

 

 

This turkey and noodle casserole recipe is an excellent way to use leftover turkey.
Or you might choose to make it with chicken or ham.

 

The casserole comes together with a simple sauce, mushrooms, harvest vegetables, and shredded cheese.

The easy sauce for this casserole is made with heavy cream and butter, so there’s very little prep involved.

 

A dash of curry powder and poultry seasoning add flavor to the sauce. Just cook the veggies, combine the ingredients, and bake.

 

Countless versions of turkey noodle casserole abound in Southern community cookbooks and recipe boxes, but I think this one competes quite nicely.

 

There is not much to it: just a creamy cheese béchamel tossed with  squash noodles, turkey, and veggies, all baked to perfection. It’s comfort food at it’s finest.

 

If you are looking for something delicious for your turkey leftovers, yet simple and easy to throw together, this is your recipe.

It’s nothing fancy, but I guarantee you there won’t be a single bite left. But then there’s always next year. LOL.

A word about squash types:

I chose to use spaghetti squash to make noodles for my casserole. Squash is in season here in the U.S. I have used zucchini noodles in the past with success.

 

You could also use shirataki noodles if you prefer.

 

As a side note, I used turkey, because it’s affordable right now, but any meat would be delicious in this simple casserole!

CJ’S FOLLOW-UP TASTE TEST

 

Like most casseroles this one got better as it had time to set.  We did the taste test and ate the casserole for dinner the next evening and it was good.  Our kids even enjoyed it.  We hope you can use this recipe to repurpose your Thanksgiving recipes, but this would be good anytime.

Ingredients

  • 3 cups turkey cooked; chopped
  • 8 oz mushrooms sliced
  • 1/4 cup white onion chopped
  • 3 or 4 cups spaghetti squash cooked; shredded
  • 8 oz cheese shredded; divided
  • 2 cups heavy cream
  • 3 TB butter
  • 2 tsp poultry seasoning
  • 1 tsp curry powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp fresh sage
  • 2 tsp fresh thyme

Instructions

  • Preheat oven to 375 degrees.
  • In a skillet sauté mushrooms and onion.
  • In a 9x13 inch baking dish, add chopped turkey, sauteed veggies and squash to dish. Set aside.
  • In a medium saucepan melt butter, add heavy cream. Bring to a simmer. Remove from heat. Add 5 ounces of cheese, stirring constantly until smooth. Add seasonings and fresh herbs.
  • Pour sauce over casserole ingredients, stir well until combined. Flatten and top with remaining cheese.
  • Bake for 30 minutes. Broil if desired for browning top. Let sit before serving.
