WHAT IS SWEATING ZUCCHINI:
Before cooking zucchini, it is important to sweat it first. To do so, you’ll need to slice the zucchini into thin slices, or into zoodles with your spiralizer, then place them on a cookie sheet. Next, sprinkle the slices with salt and let them sit for about 30 minutes.
This will draw out the excess moisture and help the zucchini to cook down. Once the zucchini has sweated out the moisture, you can then pat it dry with paper towels. This will ensure the zucchini cooks evenly and prevents it from becoming soggy. The sweated zucchini can then be added to recipes like stir-fries, casseroles, and more.
