Keto Pollo Loco casserole
Pollo Loco translates to crazy chicken which must be because most people who eat this dish are crazy for it, right? Haha.
The recipe calls for just a few simple ingredients and it comes together in under 30 minutes! The most work you need to do is slice up the chicken. Honestly, 25 minutes of the 30 minutes is hands off. That’s my style of cooking.
Also, VEEERY budget friendly! We all need a little more of that these days, unfortunately.

This chicken is packed full of flavor, the cauliflower rice is easy and delicious and the cheese dip mixed in makes the dish!!!
Feel free to garnish the chicken with some diced tomatoes and cilantro.

Keto Pollo Loco Casserole
Ingredients
- 3 cups chicken cooked; chopped
- 1 cup cauliflower riced
- 1 can rotel
- 1 can green chilies
- 1 TB cumin
- 1 TB chipotle powder
Creamy White Queso Sauce
- 2 cups white cheddar
- 2 cups pepper Jack
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1 can green chilies
- 1/2 can jalapeno peppers pickled
- 1 TB jalapeno pepper juice
- 1 TB green sazon seasoning
Instructions
- Preheat oven to 350 degrees.
- Warm cooked chicken and cooked riced cauliflower in a skillet. Season with cumin and chipotle. Add rotel and chilies. Set aside.
- Add cooked queso(see below). Stir well to combine.
- Bake for 30 minutes. Let stand 15 minutes. Serve with low carb tortillas or chips if desired.
Queso sauce:
- Heat cream, sour cream, and jalapeno juice over medium heat in a large saucepan.
- Add cheeses. Continue stirring until fully melted. Add chilies, jalapeno, and sazon seasoning.
