This ham casserole is loaded with creamy cheesy perfectly cooked ham and broccoli, I am always in search of recipes for leftover ham, it seems like we always have it after our holiday meal.

Quite a few of my favorite casserole recipes have traditionally been made with cream soups.

 

Condensed soups have been a pantry staple for a hundred years, they are inexpensive and readily available, but hardly low carb friendly because of the starches and thickeners used to bind and thicken them.

 

There are several substitute ingredients that mimic the consistency and taste of creamed soup without the carbs.

 

Cream cheese, sour cream, and heavy whipping cream all do this.

Well I just finished off the last of this delicious and easy to make casserole.  And like most casseroles it got better with time.  I really enjoyed the combination of mustard, ham and swiss someone should make that into a sandwich.  This recipe is also versatile, but as Sarah said it’s a great way to repurpose your holiday leftovers.  We hope you and your family enjoy it!

Ingredients

  • 6 cups broccoli one lb.steamed and chopped
  • 8 oz. Cream cheese
  • 1 cup sour cream
  • 2 cups cheese
  • 2 cups cooked ham diced
  • 2 cups riced cauliflower cooked
  • 2 cloves fresh garlic
  • 2 tsp herb seasoning I used 21 seasoning salute

Instructions

  • Preheat oven to 375 degrees. Grease or spray a 9x13 inch baking dish. In a small bowl combine cream cheese, sour cream, mustard, garlic, and seasonings.
  • Stir well to combine. Place ham and both vegetables into casserole dish. Add sauce and combine well. Sprinkle half the cheese, stirring again.
  • Top the casserole with remaining cheese and bake for 30 minutes. Broil the last 1 to 2 minutes for desired browning. Let sit 10 minutes before serving
