Keto Green Chili Casserole
As I sit down to write this blog post, we have just returned from a very nice trip to the Arizona desert. Tucson was a wonderful anniversary getaway for CJ and I.
I like to make recipes “on location” when I can, and several of our vacations have included them.
If you’ve been to New Mexico, you know that green chilies are a regular occurrence, all the time in the summer, you’ll find these huge roasters in front of different stores where you could buy freshly roasted green chilies.
I haven’t been to New Mexico since I was a teen, but I can still remember that smell like it was yesterday, So I really have a special place in my heart for anything with roasted green chilis in it. And a chili relleno was always my most favorite dish to order out at Latino restaurants. I wanted to make something with Southwestern flavors while we were in that region..
This easy Cheesy Green Chili Casserole recipe has just FOUR ingredients and is sure to be your new favorite side dish! Easy to make, delicious and inexpensive too….you could easily make this a complete meal adding in rotisserie chicken or ground beef! We ate ours for breakfast and it was FABULOUS!
This Green Chile Casserole recipe is so simple, yet so delicious! It is the perfect addition to a breakfast or brunch spread and has all the great savory Mexican flavors without being very spicy so it is perfect for adults, kids and every age in between. It would be a hit for a brunch or morning pot luck since it feeds a crowd.
If you have never cooked with green chilis, you are in for a treat! I use green chilis in my cooking quite a bit since they have such a great complimentary flavor, like onions or garlic, for cooking. If you have never used them and don’t really know what they are, don’t fear! They are great and I am sure you will soon be mixing them into just about everything too!
WHAT IS A GREEN CHILI?
Green chili peppers are a 5-8 inch, fleshy pepper that can range from mild to spicy. They grown across the southwestern region of the United States and throughout Mexico and are staples in the cuisine. New Mexico is especially known for their variety of the Hatch green chili, which is growing in popularity all over the United States.
Many grocery stores will even have festivals where they roast them and feature them in other prepared foods. If you see one of these, most definitely go and try a few things!
If you eat them raw, green chilis tend to be crisp, and have a stronger flavor with a bit of a bite like raw onion or garlic. When the peppers are cooked they mellow and become sweeter.
The peppers are often roasted fresh, but can be bought canned both whole and diced in the Mexican food section which is how I mostly use them. I easily located my chilies in the Mexican food aisle at Walmart.
Cotija Cheese:
Named after the town of Cotija, Michoacán where it originated, Cotija is a cow’s milk cheese and has a strong salty flavor, and is often used as a topping. I found it almost acted as a breadcrumb in this recipe. If you cannot find Cotija where you live, Feta cheese would be a good substitute.

This recipe was delicious! and actually got better as it had time to set. This is really easy to make, with minimal ingredients. I look forward to having this again, and it is great as a breakfast casserole, but would be good anytime. We hope that you enjoy it.

Keto green chili casserole
Ingredients
- Ingredients:
- 1 1/2 lbs. green chilies fresh or canned
- 6 oz. cotija cheese
- 12 oz. sharp cheddar cheese
- 4 large eggs beaten
- 1 TB heavy whipping cream
- Salt and pepper to taste
Instructions
- Directions:
- Preheat oven to 425 degrees
- Grease a 9x13 inch baking dish
- Line the bottom with a layer of green chilies. Cover chilies with half the cheeses.
- Repeat the green chilies. Beat the eggs and cream. Pour over the casserole. Top with remaining cheese.
- Bake at 425 for 35 to 40 minutes or until golden. Let rest 15 minutes.
