Beef & Bacon Breakfast Casserole

An easy recipe to make for brunch, Breakfast Beef & Bacon Casserole will delight your family or guests.
There is so much to enjoy with ground beef, bacon and eggs to get you full and satisfied!

It is a bit like uber casual quiche, minus the crust and the carbs.
Eggs are such a flexible ingredient. We love egg casseroles like this one because they are so simple to make and really seem to make everyone happy.
I’m always looking for more breakfast recipes to add to our channel. This month CJ and I have been doing a carnivore challenge and this really fits the bill.

I actually found this original recipe from the Angus beef foundation, and modified it to dis-include the sourdough bread. Of course carb eaters could have this with potatoes or bread on the side.
Another thing I really love about this, is not standing in front of the stove preparing various egg styles for the whole family. With this dish, it’s take it or leave it. LOL.

Beef and Bacon Breakfast Casserole
Ingredients
- 1 lb ground beef cooked; seasoned
- 1/2 cup crumbled bacon
- 6 eggs large
- 1/2 cup heavy cream
- 2 TB cream cheese softened
- 8 oz cheese shredded
- 1 TB salt
- 1 TB pepper
- 2 tsp all purpose herbal seasoning
Instructions
- Preheat oven to 350 degrees. Grease a 9 or 10 inch pie dish.
- Brown ground beef until cooked. Cook or reheated crumbled bacon
- In a blender or using a whisk, combine eggs, cream cheese, heavy cream, and seasonings until well combined.
- Add meats to bottom of pie dish. Pour egg mixture evenly over. Add cheese evenly over casserole. Bake 30 minutes until egg is cooked. Let sit 15 minutes before serving.
