Sugar-free Low Carb Peanut Butter Candy with a Chocolate Ganache
This week we bring you another Low Carb/Ketofied recipe. We’ve taken a old recipe from the 80’s called Peanut Butter Candy and made it into a Low Carb version. This recipe has a lot of fond memories for Sarah because it was something that as a child she looked forward too as part of her school lunches in elementary school and junior high school. That version of course was not keto or low carb friendly but still it was delicious.
This is a pretty simple no bake recipe. Sarah experienced some challenges in her initial attempt to make the ganache layer. Sarah prefers milk chocolate versus dark chocolate. We have yet to find sugar free milk chocolate chips for baking that aren’t filled with a bunch of junk like Maltitol. Lily’s Chocolate makes sugar free Dark Chocolate chips but not milk chocolate. We attempted to use two Lily’s milk chocolate bars over our homemade double boiler, and that turned into a mess. However, Sarah to her credit didn’t give us although she was frustrated she devised a Plan B on the fly.
Last year I purchased a bag of Cacao powder because I wanted to make a dark chocolate candy recipe from the good folks over at KetoConnect.net, that never happened I never made the candy but this Cacao powder has really been handy. You could use regular cocoa powder however, the Cacao has a richer flavor. This is a NO BAKE recipe. Once you’ve made the two layers you just refrigerate and let harden for approximately 1 hour.

Sugar-free Low Carb Peanut Butter Candy
Ingredients
Peanut Butter Candy
- 1/2 Cup Butter Melted
- 2/3 Cup Low carb whey protein powder Vanilla flavor or plain
- 1/2 Cup Natural sugar-free peanut butter
- 1 Tsp Vanilla extract
- 1/2 Cup Powdered Erythritol
Ganache topping
- 3/4 Cup Heavy Cream
- 3/4 Cup Cocoa Powder We used Cacao powder
- 1/4 Cup Erythritol Powdered works best
Instructions
Peanut Butter Candy Layer
- Grease a 8x8 baking dish and cover the bottom with parchment paper.
- Combine all ingredients for peanut butter layer, and mix well by hand or with a hand mixer.
- Pour and press into the bottom of your prepared baking dish and set aside.
Ganache Layer
- In a heavy saucepan or double boiler, bring your heavy cream up to a simmer, be conscious not to scorch use a whisk to stir often.
- Add Cocoa powder and sweetener, whisking constantly until smooth.
- Pour over peanut butter candy mixture.
- Refrigerate for 1 hour or until firm
- Enjoy!
