Keto Cinnabon Cake

Scrumptious and easy to make! It tastes like the gooey center of a cinnamon roll in a soft and moist cake!

 

I absolutely LOVE anything to do with cinnamon rolls. Cinnabon’s are my top favorite, but far from low carb friendly….but any soft and gooey roll is my absolute weakness and favorite treat!

I also love cake, so naturally, this cake was right up my alley. Really anything spice flavored is my ideal dessert.

 

All of the flavor, with a lot less work

 

Let’s face it, cinnamon rolls are delicious. But very time intensive… All that rolling and needing and cutting… This cake gives you all the wonderful flavors in a much simpler way! Plus, your house is going to smell fantastic. Lol

 

The cake itself is very moist and soft – a good vanilla cake with those thick swirls of the cinnamon and brown sugar alternative . As it bakes, the cinnamon sugar mixture seeps deep into the cake, creating these delicious ribbons.

 

The cake is topped off with a simple glaze that really sends this cake over the top without being too sweet.

A Few Tips:

 

Use really fresh spices if possible… Using years old cinnamon is really not going to make this cake pop.

 

Be aware this batter is more like a dough. It will be VERY THICK, so don’t be alarmed.

This is also fully customizable… Putting in a few walnuts or chopped pecans would be delicious here.

 

I made our cake in an 8 x 8“ dish… But if you were serving a larger family or a crowd, this could easily be doubled into a 9 x 13“ dish.

 

Parchment or a well greased dish is essential. You want to get every last bit of cake out!

 

PRO TIP: Cinnamon Roll Cake tastes best when slightly warmed. If you have leftovers that get cool, just pop your slice of cake in the microwave for a few seconds to reheat.

Ingredients

cinnamon sugar layer

cream cheese glaze

  • 2 oz cream cheese very soft
  • 2 oz heavy cream
  • 1 tsp splenda liquid

Instructions

  • Preheat oven to 350 degrees
  • spray and/or parchment line an 8x8 baking dish
  • Mix together all the cake ingredients. Dry first, followed by wet.
  • Spread into the bottom of the baking dish. It will be VERY THICK.

Cinnamon layer

  • Mix together the cinnamon layer. Pour on top of the cake. Swirl with a knife. It will appear lumpy.
  • Bake at 350 for 30 minutes

cream cheese glaze

  • Combine ingredients. Spread over warm cake.
